Why use stainless steel cutting board - some research findings

Stainless steel cutting board, as a material, though, is extremely hygienic and simple to clean, making it somewhat attractive as a cutting board. The main selling point of stainless steel cutting boards is their hygiene factor.

Dean O. Cliver, a professor of food safety at the University of California Davis and lead researcher on this topic told Rodale: “With the plastic, after manual washing as I would do under my kitchen faucet, we could still recover bacteria from grooves.” Dishwashers didn’t eliminate the problem either because the bacteria didn’t actually die—they were re-deposited on other surfaces in the dishwasher. And tests on old plastic boards treated with disinfectants such as chlorine bleach still found levels of residual bacteria hiding in grooves, he adds.

 

With wooden cutting boards, the problem with bacteria hiding in the grooves is prevalent. We are aware that in the course of food preparation, the destructiveness of the sharp cutting edges of knives can be damaging to your stainless steel cutting boards so we recommend that your ceramic knives cut your food to prevent scratches to the surface of your board.  Over time, any cutting board (plastic or wood) can trap bacteria in fissures and transfer them to food the next time you use it. Harder materials, such as bamboo and maple, are less prone to scarring than softer woods, such as cypress. Replace any cutting board when it becomes heavily scarred.    With wooden and plastic cutting boards, you may need to use at least two cutting boards to avoid cross-contamination. "Have one board for raw meat, fish, and poultry," and a separate board for bread, fruits, and vegetables."
